THE PERFECT AFTERNOON TEA : VANILLA CUPCAKE RECIPE




What you need:
·      200g softened butter
·      2 tspns vanilla extract
·      370g caster sugar
·      4 eggs
·      405g self-raising flour
·      250ml milk

For the icing:
·      I cheated and used Betty Crocker Vanilla Icing
·      Any decorations (mini marshmellows, sprinkles, chocolate buttons!) 

Or you can be really impressive and make the icing yourself…
·      200g softened butter
·      900g icing sugar
·      125ml milk


Step 1: Preheat the oven to 180°C (356°F) and line the muffin pans with patty cases

Step 2: Cream the butter, sugar and vanilla extract together with an electric mixer. Adding only one egg at a time, beat until combined. Add the flour and milk in alternating batches and stir with a wooden spoon until the mixture is combined.

Step 3: Spoon mixture evenly among the patty cases.  Bake for 15-20 minutes or until cooked through. Remove from oven and transfer to wire rack to cool completely

Step 4: For the icing, use an electric mixer to beat the butter until pale, then gradually add icing sugar while beating. Finally add the milk and beat until combined.

Step 5: Divide frosting into small bowls and colour. The decorate with any toppings you fancy! Wallah!
